Easy Festive Tray Bake
Baking isn’t for everyone some people don’t have the time or struggle/worry! This Festive bake is so super easy, and my children love it! I’m really not the best person at baking but it’s nice to make things from scratch for the husband and kids to enjoy. You will see from the photos it doesn’t look perfect and not Bake off worthy, but it doesn’t matter at all along as it tastes good!
A twist on the sponge cake we used to get in schools as a child, it’s super easy & quick to make and tastes amazing especially with custard or ice-cream!!
Cake – you will need
Large baking tin or two smaller ones
400g Self raising flour
350g caster sugar
2 tsp vanilla essence
Icing – you will need
500g Icing sugar
Topping like sprinkles or stars
Food colouring (if desired)
First line a baking tray with some greaseproof paper.
Blend all the cake ingredients together, yes whack them all into a bowl and with a hand, mixer whisk that mixture until it’s fluffy, all one colour and texture.
Pour into your baking tray and spread it out evenly.
Bake in the oven on gas mark 9 for around 20 – 30 mins (depending on your over) keep an eye on it until it looks golden brown on top. Take a thin knife or cake prodder and pierce through the middle of it comes out clean the cake is done!
Leave in the tin and allow to cool fully, don’t loosen the sides.
When fully cooled make the icing add any food colouring if you want to and pour on top. Sprinkle on decorations quick before it sets.
